Walnut Lemon Salad Dressing

(makes about 1 1/4 cups)
1/4 cup of raw walnuts
1/2 cup of soy milk
1 small lemon
About 2 tablespoons of soy sauce
About 2 tablespoons of extra-virgin olive oil
About a 1/4 teaspoon of sweet basil
Black pepper to taste
A dash of cayenne pepper (optional)
A splash of apple-cider vinegar (optional)

Grind the walnuts in a food processor or blender until fine.  Add the soy milk, the juice of a
small lemon, olive oil, sweet basil, black pepper, and the optional ingredients if you like.
Blend until creamy and well mixed.  Add or reduce the soy sauce, olive oil, or basil if you like.
Experiment.  I prefer the subtlety of the basil, but you may like it stronger. Walnuts are high in
Omega-3.
