Veggie Hash

-6 oz Yves veggie ground round
(or other vegan crumbles)
-2 Tbsp vegan bread crumbs
-1 minced medium onion
-1 Tbsp soy sauce or olive oil
-1 cup diced cabbage
-1/4 tsp salt
-pinch pepper
-1 large russet potato

Mix veggie ground round and bread crumbs, then set aside.
 Microwave potato on high
setting for 3 minutes, then turn and
microwave potato another 3 minutes.  Dice potato.  
Saute onion in oil or soy sauce for 5 minutes, then add cabbage and diced
potato and cook
until potatoes are softened throughout, stirring frequently.  Stir in salt, pepper, and ground
round mixture and cook for 5 minutes more.
