Baked Sweet Potato Fries

Cut desired amount of sweet potato into french fry size pieces. Place in a bowl and mix in a
little salt, ground pepper, rosemary, and extra-virgin olive oil (about a tablespoon depending
on size batch). You can also add slices of onion with it if desired. Stir well.  

Place in a baking pan and put in oven pre-heated at 375 degrees and bake until they soften
and brown a bit at the edges- anywhere from 20-30 minutes, but test regularly. By the way
you can leave the skins on the sweet potato if they are organic (the skins have alot of
minerals in it!).  This dish goes great with tofu sour cream.
