Mocha Pudding

1 12.3 oz of Silken Tofu Firm (made by Mori-Nu)
1 heaping tablespoon of cocoa powder
1/2 teaspoon of coffee substitute
4 tablespoons of maple syrup
1 tablespoon of canola oil
1 tablespoon of sunflower or safflower oil (if not availabe use an extra tablespoon of canola)
1/2 teaspoon of vanilla extract (optional)
dash of salt

Put all ingredients into a food processor and blend until creamy. It's done-  although it's best
to chill for about 2 hours or more before eating. The sunflower or safflower oil give it a real
nice buttery like taste, but it would still be yummy with just the canola oil.  This recipe is very
fast and easy to make. Enjoy!
