Date Cake

1 1/3 cups pitted dates
1/3 cup pecans (can substitute walnuts or almonds)
1/3 vegan margarine
1/3 cup water
3/4 cup raisins
1/2 tsp cinnamon
1/2 tsp nutmeg
Pinch sea salt
2 cups wholewheat flour
1 tsp baking powder
1 tsp baking soda
1 cup soy/rice/almond milk

Chop the dates and nuts.  Put the dates, margarine, water and raisins in a large saucepan.  
Bring to a boil and then let it boil, stirring occasionally, for 2-3 minutes.  

Remove from heat.  Stir in all dry ingredients.  Add soy/rice/almond milk and stir until mixed.  
Turn into non-stick or lightly sprayed 9x9 baking dish.  Cook at 350 degrees for about 45
minutes.
